Honey process coffee is a method where producers remove the outer skin of the cherry but keep some or all of the sticky layer underneath (called the mucilage) on the bean during drying. As a result, the bean absorbs sugars from the mucilage as it dries. Consequently, the cup tastes sweeter than washed coffee but cleaner than natural.
